Sandkaker is a crumbly shortbread cookie that originates from Norway. This buttery delight is commonly enjoyed during Christmas time and holidays. It can be eaten alone or topped with a variety of combinations, like berries and whipped cream to elevate the flavors.

Scandinavian Sandkaker

Here is the traditional family recipe Viking Cruises uses to make their Scandinavian Sandkaker:

Ingredients:

250 g of butter

190 g of sugar

1 large egg

100 g blanched, ground almonds (for best results, blanch and ground the almonds a day before)

375 g flour

Directions:

Cream together butter and sugar until fluffy, add the egg

Add almonds and flour, mix until dough comes together

Rest the dough in the fridge overnight

Press into molds (there is a special Sandkaker mold but you can use a small tart mold)

Bake the cookies at 350F/176C for about 12-15 minutes, or until the edges are golden brown

Cool for 7-10 minutes before taking the cookies out of the mold
